Where pancit comes from

Pancit is the whole Filipino family of noodle dishes rather than one recipe, and it traces back to the same Chinese kitchens that brought lumpia. Bihon are the thin rice noodles — the ones that go translucent in the pan and take on the color of whatever they are cooked in.

Long noodles are associated with long life across the Philippines, which is why pancit turns up at every birthday and why, traditionally, nobody cuts the strands. It is a wish served in a tray, and it is meant to be shared.
